August 28, 2026: recently I found some prairie mimosa, Desmanthus Illinoiensis (family: Fabaceae, subfamily:mimosioideae) while out and about walking around. While staring into its wonderful and numerous seedpods, I had the thought that I could make tofu from it, since tofu is really just curdled bean milk and you can make it from just about any bean. I will venture out again soon, collect more, and see what I can do for tofu.
